Cut the tomatoes at the top and empty the inside with a teaspoon.- Keep the juice and the flesh of the tomatoes.
- Peel and mince the onion. Sweat it with olive oil.
Add the tomato flesh and juice, reduce.
Add the mincemeat and stir out of the heat. Add the egg, the chopped garlic and the breadcrumbs (keep some).- Add the diced ham and the chopped parsley.
Stuff the tomatoes with the mix and sprinkle the top with breadcrumbs.
Put in the oven at 160° for 35mins.
