Wine is the result of a perfect harmony negotiated between man and earth. It has been an indispensable part of Mediterranean and other cultures for centuries. It has played such an essential role for so long throughout history that even wine Gods were once revered, feared and prayed to for successful harvests (Dionysus worshipped by the ancient Greeks and Bacchus by the Romans).
Nowadays, only the know-how and talent of the modern viticulturist can cultivate his grapes so as to reflect the "soul" of a specific region when making a product so unlike any other: WINE!
We specialize in Southern French wines. One of our main goals is to have all our cherished customers discover the rich history, variety, savor, multiple facets and quality of our specially selected "soulful" wines from the South of France. [We feel an obligation in this respect because we are so enthusiastic and proud of the wine made in our country’s southern regions, and we are sure, once you try some yourself, you will be too.]
From Nice to the Pyrenees, the diversity is vast. There is absolutely positively a wine for everybody, even those who have never sampled French wines or who have always believed they were not particularly fond of them. L'air doit rentrer dans la bouteille par petites bulles. Puis à la lueur de la bougie placée en-dessous, suivre la progression des flocons de dépôt qui s'avance traîtreusement vers la sortie. Réduire la vitesse de l'opération et relevez vivement de façon qu'ils restent dans la bouteille. Pas un atome de dépôt ne doit, dans la carafe, maculer la pureté visuelle du vin.Préparation Mentale
Le buveur se dispose à boire, il concentre toutes ses facultés d'attention sur son verre.Plaisir des Yeux
Le verre est rempli à moitié, le buveur l'incline de façon à jouir des couleurs, en variant les couches de liquide.Plaisir du nez et du cerveau
La surface du vin étant tenue horizontale, on aspire doucement pour "flairer les bouquets". On intensifie l'impression olfactive, en donnant au liquide un mouvement progressif de rotation. Cette danse favorise l'émanation des principes volatils par l'agitation et le contact de l'air.Plaisir de la bouche, de la langue et du palais
Ensuite on boit délicatement à petits coups, comme des oiseaux, on retourne chaque bouchée dans la bouche pour mieux analyser.L'Appreciation
La tête se penche, le visage devient grave, et du fond de son âme, rassemblant les souvenirs, recueillant par intelligence, d'anciennes sensations, le buveur s'érige en juge. Alors on discute, on compare.
